Pasta Primavera

A simple recipe that tastes so good! This recipe has endless possibilities, because you can select any combination of vegetables and any kind of pasta. While sauces are not needed for this recipe, there are several that you can try. Its fast, easy, and good. Leftovers keep and reheat well. Serves 6.

Ingredients

1 lb. pasta of choice
Vegetables of your choice
Olive oil
Herbs de Provence (or other vegetable spices)
Sea salt

Directions

1. Preheat the oven to 400 degrees and start some water boiling for pasta.

2. Select three or more vegetables from the store that look good. I like to use asparagus, red pepper, zucchini squash, and mushrooms. But consider using onions, broccoli, cauliflower, carrots, etc… Cut into veggies into bite-sized pieces and throw into a bowl.

3. Add olive oil and spices to the bowl. Do this to taste.

4. Get messy using your hands to toss the veggies in the bowl. You are coating the veggies with olive oil and seasoning. Use your judgement on adding more oil or seasoning.

5. Spread coated veggies on a cookie sheet, sprinkle with some Sea Salt, and place in a 400 degree oven for 8 minutes. Stir/flip the veggies and put back into the oven for 7 more minutes (15 minutes total).

6. Start cooking pasta (per package directions) when you put the vegetables in the oven.

7. In a serving bowl, mix cooked pasta and vegetables. Serve immediately. Garnish with Vegan Parmesan Cheese. Also good with garlic bread (and you have the oven on already!!).

8. Optional: Top the dish with fresh vegetables, like tomatoes or green onions.

Optional Ending

If you are doing a sauce with this, it is best to add it to the pasta before you add the vegetables. You can even serve with the vegetables on top of the pasta/sauce. While you could use any sauce, here is a good vegan one that you might like;

Reserve one cup of the pasta water before draining the pasta. Add the pasta to the mixing bowl along with the reserved water and 1/3 cup of nutritional yeast. Mix thoroughly until the nutritional yeast dissolves in the water. Add the vegetables and mix again.
