This is a crock pot recipe that serves 8 people and takes about 10 hours to make.
Ingredients
Dry rub for the roast
- 2 tbsp Paprika
- 1 1/2 tsp Salt
- 1 tsp Garlic Powder
- 1 tsp Taragon
- 3/4 tsp Ground Black Pepper
- 1/4 tsp Rosemary
- 1/4 tsp Thyme
- 1/4 tsp Oregano
- 1/4 tsp Basil
Other Ingredients
- 3 to 4 pound beef round roast or chuck roast
- 2 tbsp Avocado Oil
- 2 lbs Baby Carrots
- 3 ribs Celery
- 1 Onion
- 2 cloves of minced garlic
- 2 strips of bacon cut in half (optional)
- 2 1/2 cups Beef Broth
- 1/2 cup red cooking wine
- 2 tbsp Tomato Paste
- 5 tbsp All-purpose Flour (for gravy slurry)
Directions
- Cut the onion in half and then cut 1/2 inch slices. Break apart the onion layers into the bottom of the crock pot and turn the crock pot onto the “low” setting.
- Cut up the celery into 3/4″ long slices and set aside.
- Combine the ingredients for the dry rub together. Rub them over the roast until the roast is completely covered. Heat the oil in a heavy pan or skillet under high heat. Sear/brown all sides of the roast, then place roast on top of the onions in the crock pot.
- Add the beef broth to the skillet and bring to a boil, whisking up any browned pieces of roast that are still in the pan. Add the wine, tomato paste, and garlic. Whisk to combine all the ingredients.
- Place the carrots and celery around the roast in the crock pot. Lay the strips of bacon on top of the roast. Pour the beef broth mixture around the roast.
- Cook on low for 8 to 9 hours or on high for 4 to 5 hours (Low is going to result in a more tender meat).
- When completed, make a gravy slurry from the flour along with 1/2 cup of beef broth.
- Remove the roast and the veggies from the crock pot (I usually put them on the serving dishes I am using, but you could also put them back into the warm crock pot once the liquid is poured out). Pour the remaining liquid from the crock pot into a pot. and bring it to a boil. Whisk in the gravy slurry and continue whisking it until the gravy is thickened. Season with salt and pepper to taste.
- I usually discard the bacon (or feed it to the dog), but you could chop it up and mix it with the veggies. I also make potatoes to serve with this meal. If you don’t like carrots, you could omit them and make a different veggie on the side.
