Granola

This is my go to breakfast meal. I just add almond or coconut milk to a bowl of granola. Super easy and fast. I also like this recipe, because there are many variations that you can explore. I’m showing you my favorite below, but you can use any nut, seed, dried fruit, or sweet chip you want. Try some different combinations….the possibilities are endless!

Ingredients

3 cups old fashioned rolled oats
1 ½ cup pistashios (can use any nut and/or seed)
1 teaspoon fine-grain sea salt
½ teaspoon cinnamon
½ cup melted coconut oil
½ cup honey (can use maple syrup or honey & maple syrup)
1 teaspoon vanilla extract
1 cup craisins (can use any dried fruit, chop the fruit up, if it is large)
1 cup dark chocolate chips (can use any sweet chip and/or coconut flakes)

Directions

1. Preheat oven to 350F and line a large, rimmed baking sheet with parchment paper. In a large mixing bowl, combine the oats, pistachios, salt and cinnamon. Stir to blend.
2. Pour in the melted coconut oil, honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer. Bake until golden, about 18 minutes, stirring halfway. The granola will further crisp up as it cools.
3. Let the granola cool completely, undisturbed, before breaking it into pieces and stirring in the craisins and chocolate chips. I perform this last step in a bowl or the zip lock bag that I’m using to store the granola. Store the granola in an airtight container at room temperature.
