Here is a simple, no-cook energy bite that is a great pick-me-up when out on the trail.
Ingredients
- 1 cup peanut butter
- 3/4 cup coconut flour
- 3 tbsp Agave
- 1/2 cup mini chocolate chips (I use Keto chips to reduce the refined sugar)
- 1/2 cup coconut flakes
Directions
- Place parchment paper in the bottom of a 9″ x 9″ pyrex dish.
- Add the peanut butter, coconut flour, agave, and chocolate chips into a stainless steel bowl and stir thouroughly
- Put the coconut flakes in a separate shallow bowl.
- Use your hands to roll 1″ balls of the dough, then coat them with the coconut flakes and place the ball in the pyrex dish.
- After all the balls are created, cover the dish and refrigerate for at least 30 minutes. Keep them refrigerated until they are ready to use. You can also freeze them to keep them longer.
