I was looking for an energy bar recipe that I could make when on a camper van trip. I wanted something high in protein and low in carbs. It also needed to be a recipe that didn’t need to be baked, as I don’t have an oven in my camper van. This is very good and very simple, but I may tweak it a little in the future.
Ingredients
- 1/2 cup coconut flour
- 1 cup chocolate protien powder (Six Star Pro Nutrition 100% Whey Protein Powder Plus)
- 1 tbsp collagen (Thorne Collagen Plus)
- 1 cup creamy peanut butter
- 1/3 cup honey
Instructions
- Line a 8″ x 8″ pan with parchment paper
- In a medium size bowl, mix together the coconut flour, protein powder, and collagen
- In a small bowl, add the peanut butter and honey. Microwave it until it is melted. Then use a spatula to stir it together.
- Add the liquid to the dry ingredients and mix with the spatula until you have a blob of dough that holds together. If it doesn’t hold together, add some water or almond milk (a little at a time) until it holds together into one blob.
- Transfer the blob of dough into the pan and press it down firmly into an even layer. Refrigerate for 30 minutes.
- Use a sharp knife to cut out the bars and store in plastic bags or sealed plastic containers. Store in the refrigerator.
