Mixed Berry Cobbler

Takes about an hour to make this and serves 12 people.

Ingredients

Berry mixture
  • 6 cups of frozen mixed berries (can also use fresh berries, if in season)
  • 1/2 cup sugar
  • 2 tbsp corn starch
  • 1 tsp lemon juice
  • 1/2 tsp pure vanilla extract
Crumble topping
  • 2 tsp cinnamon
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 1/2 cups oats
  • 1 cup all purpose flour (I use GF flour)
  • 2 sticks (1/2 cup) unsalted butter (cut into cubes)

Directions

  1. Preheat oven to 350 degrees. Grease a 9″x13″ pan.
  2. Make the mixed berry filling in a large bowl by folding all the berry mixture ingredients together. Pour out the filling into the greased pan.
  3. Use a food processor with a dough blade, or an electric mixer to make the crumble topping. Put all the topping ingredients into the food processor and run the dough program. Spread the mixture on top of the berry filling in the pan and smooth/even out.
  4. Bake for 40 to 45 minutes until the crumble topping is golden brown.
  5. Remove from the oven and let cool for at least 5 minutes before serving. I like to top it with vanilla ice cream.
