Beans and Rice

Ingredients

  • 1 cup brown Minute Rice
  • 1 cup dehydrated beans (I usually use a mixture of black, kidney, and pinto beans)
  • 1 cup dehydrated bell peppers and tomatoes
  • 1/2 tsp ground cumin
  • 1/2 tsp ground curry powder
  • 1/8 tsp cayenne powder
  • 2 1/2 cups of water

Directions

  1. Add all the ingredients to a pot of water and bring to a boil
  2. Cook to package directions for the rice.

You have flexibility with the types of beans you use and the types of dehydrated veggies you use. Also, you could add another protien to this recipe, such as chicken or sausage – you just may have to adjust the amount of water used.
